I made this delicious omelette from a recipe of one of my very favourite nutritionists, Lola Berry, she is my kind of gal, I love her simple and nutritious recipes that are a winner everytime.
This one takes about 5 minutes and broccoli is a great source of vitamin C. You are going to love it, here we go…
- 4 eggs whisked
- 1/2 cup crumbled goats feta
- salt, fresh groud pepper
- chilli flakes
- 2 tablespoons extra virgin olive oil
- 1/2 head of broccoli florets chopped
- handful of kale, or spinach
- 2 shallots, green bits
- 1/4 bunch dill
- 1 avocado
- lemon wedge to serve
combine eggs, feta, chilli, and seasoning in a bowl and mix it all up. Heat 1 tablespoon olive oil low to medium heat. Add half the broc and saute for about a minute add half the kale or spinach stir a further 1-2 minutes. Pour half the egg mixture into the pan and cook for 3 minutes or until base of omelette is firm and has just set on top. Flip omelette and cook for another 2-3 minutes. Remove and repeat process for the second omelette. Top with shallots, dill and extra drizzle of olive oil, avocado and lemon. And get it in your belly!
