- 250ml water
- 2 cm chunk ginger root peeled and chopped
- 1 cm chunk turmeric root peeled and chopped
- 250ml coconut water
- 2-4 tablespoons manuka honey
- 1 large lemon or 2 small
- 2-3 tablespoons organic gelatin
Place water, ginger, and turmeric into a small pot and bring to the boil, reduce to simmer for about 5 minutes, then allow to cool for 5 or so minutes. Strain and remove chunks of ginger and turmeric and stir in the coconut water, honey and lemon.
Taste to check you are happy with the sweet and sour balance and it’s to your liking. When luke warm sprinkle to gelatin over the liquid and allow it to sit and bloom, go wrinkly for a few minutes.
For a traditional jelly to set use 2 tablespoons, for a firmer gummy lolly consistency add 3 tablespoons. If the gelatin doesn’t completely dissolve, you can put back on the heat for only 1 minute and luke warm heat, stirring well.
Pour into a lined tray or moulds and set in the fridge.
