Paleo Veggie Bread Recipe!

One of my favourite things is to swap recipes, I love it because you know it’s been tried and tested and loved for it to be passed on.

So, I just had to share this one in my blog! This paleo, veggie bread is a brilliant alternative to regular bread and I think twice as yummy AND so much better for you and your digestive system.

Here it is my version of a PALEO VEGGIE BREAD.

I make this at least once a month, quick to make, you can freeze in portions and top with just about anything! My personal favourite is to toast a couple of slices and top with avocado, sprouts, salt & pepper, or poached eggs and feta! Simple and delicious! 🥑

Ingredients:

2 cups of almond meal

1 tsp bicarb soda

4 eggs

2 tbs Apple Cider Vinegar

1 cup grated Zucchini (excess water squeezed out)

1/2 grated carrot

1/4 cup grated cheddar

2 tbs chopped chives

3 tbs pepitas

*NOTE: If you eat meat you can add 1/2 cup of shredded ham, bacon, or whatever you like. Depending you may need to add one more egg too.

Mix all ingredients in a bowl together except the pepitas. Spoon into a baking paper lined bread tin. Sprinkle pepitas over the top. Bake in a moderate oven for around 45 minutes. Or until cooked through.

Enjoy a couple of slices hot from the oven with butter!!
